Eighty years, one cake, zero fondant roses — a deep bitter-orange tier ringed with candied peel.
Her family wanted a cake as particular as she is. The brief, relayed by a granddaughter over the phone: no pastels, no script piping, nothing that looks like it came from a hotel lobby. So we went deep bitter-orange, citrus all the way down, and let a single ring of candied peel do every bit of the decorating.
One generous single tier — she vetoed the tall version ("it’s a birthday, not a building"). Bitter-orange sponge soaked in citrus syrup, a dark-chocolate cream between layers, and a hand-cut ring of candied peel around the top edge. The eighty candles went on at the table.
Made here in bitter-orange & almond with dark-chocolate cream. Works just as well as fig & black tea for an autumn birthday.
