A return client who had ordered our most flower-heavy cakes asked, for her own birthday, for the opposite: one clean tier and a strict count. Nine stems, no more, grouped off-centre so the empty space did as much work as the flowers.

the build

A single ivory tier, finished as smooth as we could get it and left almost bare. Nine wired sugar stems — buds, a half-open bloom, one fully open — gathered to one side and angled up, counted twice before they went on.

Built here in pistachio & rose. Would take just as well to fig & black tea for something darker under the pale exterior.
