Glaçage no. 9

Built like an object: clean lacquered sides, a crown of nine hand-set sugar flowers, nothing extra.
A gallery opening that wanted dessert to feel like part of the show. The brief was a single word — object — and we took it literally: hard edges, a mirror-clean glaçage, restraint everywhere it counted.
Two tiers with deliberately hard shoulders, finished in a pale periwinkle glaçage poured in one pass for a mirror surface. The only ornament is nine sugar flowers, hand-set and counted twice.
Built here in lemon & elderflower with white chocolate. Also striking as chocolate & crème fraîche under the pale shell.
Ordered for gallery openings, product launches, and design-minded birthdays — anywhere the cake gets photographed as much as eaten.

People photographed it like a piece on the wall. That was the whole idea.
A collector asked whether it was for sale. I told him yes — by the slice.
