A single sculptural tier for a loft dinner — pistachio sponge, rose-water cream, a low crown of sugar roses.
A seated dinner for twelve in a downtown loft. The host wanted one striking object at the centre of the table rather than dessert plated in the kitchen — something to cut in front of everyone.
One wide tier, lacquered smooth, crowned with a low arc of sugar roses in three tones of green and blush. Pistachio sponge, rose-water cream, and a thin layer of raspberry for acidity so the rose lands as flavour, not perfume.
Made here in pistachio & rose. The same low silhouette works beautifully in lemon & elderflower or olive oil & citrus.
Ordered for dinner parties and supper clubs — wherever the cake is the event and gets cut at the table.

Nobody wanted to be the one to cut it. Then nobody wanted to stop eating it.
I don’t even like rose in desserts and I went back for thirds. Recalibrate accordingly.
